people like Taylor swift don't need sheet music. It is 4 freeking chords! EVERY SONG!! Anyway, usually they do not use sheet music unless it is more intricate music such as symphony, metal, or etc. Taylor swift-esque music pretty much just uses simple chord formations and major scales, so there really isn't much to be written other than the octave structure for the real musicians.

I guess they hire a person who uses a computer program to take the music recording and generate sheet music from the recording.

I used to use a program called "Music Time Deluxe" for Windows, but it was very time-consuming. I’m sure there are computer programs that can really quickly produce sheet music.

Then, I think the professionals have the sheet music submitted to the Library of Congress, to get it Copyrighted. Once everything is Copyrighted, then they can sell it.
